With Fall on the horizon, it’s nearly time to start breaking out the baking equipment. One of our favorite rituals when temps start to dip is warming up a thick slice of fall-spiced bread, either as a breakfast treat or as a snack with an afternoon cup of tea or coffee.
And since we can’t wait any longer, we decided to go ahead and whip up a gluten free bread recipe that’s filled with cinnamon (half of the goodness of baking is the smell of spice wafting from the oven, right?) and healthy monounsaturated fats from almonds, flaxseeds, and AJK’s antioxidant-rich avocado oil.
We’ve topped this loaf with pecans and shredded coconut, but feel free to choose your own!

Total time: 40 minutes
Serves: 8-10
Equipment needed:
Loaf pan
Two mixing bowls
Ingredients:
2 cups blanched almond flour
(not almond meal)
2 tbsp coconut flour
1/2 tsp Colima Sea Salt
1 tsp baking soda
1/4 cup flaxseed meal
5 eggs plus 1 egg white, whisked
5 tsp Apple cider vinegar
2 tbsp maple syrup or honey
2 tbsp Ava Jane’s Kitchen Avocado Oil
1 tbsp cinnamon
⅓ cup crushed pecans and shredded coconut for topping
Instructions:
Preheat your oven to 350F. Line an 8×4 bread pan with parchment paper at the bottom.
In a large bowl, mix together almond flour, coconut flour, salt, baking soda, flaxseed meal, and 1/2 tablespoon of cinnamon.
In another mixing bowl, whisk together your eggs and egg white. Add in your maple syrup, apple cider vinegar, and avocado oil.
Mix wet ingredients into dry, stirring until all lumps are gone.
Pour batter into the loaf pan.
Bake at 350º for 30-35 minutes, or until a toothpick inserted into center of loaf comes out clean.
Remove from oven and serve. Store for later wrapped in parchment paper or sealed in your fridge.

what do you do with the ⅓ cup crushed pecans and shredded coconut for topping? do you add them before or after you bake it?
You add them before you bake.
Where do pecans & coconut go in recipe. ? I’m assume pecans in batter & coconut on top.!
The pecans and coconut are to be used as toppings before baking. However, feel free to experiment!
It looks like the recipe calls for 1 Tblsp cinnamon, but the instructions say to put 1/2 Tblsp. in with the dry ingredients. Which one is right?
I looked at your comment and back at the recipe wondering the same thing. I’m guessing perhaps the other 1/2 TBS cinnamon is to be mixed with the “1/3 cup crushed pecans and shredded coconut for topping.” This is the last line of the ingredients. I also wonder if it is 1/3 cup each of nuts and coconut? I guess we’ll have to experiment with it. I am looking forward to trying this recipe. If I make it tomorrow, I’ll post back to let you know what happens.
Hi Rebecca- There was a typo and it should 1 TBS of cinnamon. The toppings can be a 1/3 c each of pecans and coconut or combined 1/3 c, depending on how topping heavy you would like your bread.
