Summer is for grilling, but that doesn’t mean you can’t eat more than meat!


Nothing is better in the summer than juicy, ripe tomatoes that are grown the way a tomato should be grown.


While I like to eat tomatoes in every way possible — raw, salted, in a salad, salsa; the list goes on — they are also great to dress up a plain old grilled chicken breast.


Of course, the chicken isn’t left out — it needs flavor too. And in this case, it gets flavor from Ava Jane’s Kitchen’s Nana’s Italian Seasoning and a little salt and pepper. Then it’s chargrilled to perfection and topped with a delectable tomato topping.


The topping couldn’t be more simple — fresh chopped tomatoes, slivered basil leaves, and some Hot Roasted Garlic. Toss, spoon generously onto of your chicken and sprinkle with some Colima Sea Salt. The crunchy salt brings out the amazing flavor of the tomatoes even more, so don’t leave it out!


I served this on a bed of spinach with a spritz of Ava Jane’s Kitchen Avocado Oil and a bit of lemon. Not too much; it doesn’t need it.

To serve:


  • Preheat a gas or charcoal grill over medium high heat.
  • Brush the chicken with the oil and sprinkle with the seasoning.
  • Grill until chicken reaches an internal temperature of 165 degrees F.
  • While the chicken is on the grill, combine the bruschetta ingredients in a small bowl. Season to taste.
  • Place some greens on plates. Drizzle with a bit of oil and lemon juice.
  • Top with the chicken and spoon the tomato mixture over top before serving.
