No matter what your skill level in the kitchen, there are things you should be able to cook to perfection without fail.
A juicy chicken breast is one of these things. If you’ve ever had bone dry chicken breast or — even worse — chicken that is pink in the middle, then you know what I’m talking about.
Fortunately, it’s pretty simple to make an amazing chicken breast, and all you need is a killer seasoning blend, an oven, and a meat thermometer.
For the seasoning, I used a combination of Roadside Chicken, Nana’s Italian Seasoning blend, and a tiny bit of brown sugar. The sugar is simply to promote browning. If you’re watching your sugar intake, you can certainly leave it out, just know that your chicken may not be as brown. But it will still be good.
You will also need to pound the chicken to an even thickness. Part of the reason so many chicken breasts end up over or under cooked is because they never start out even. So grab a mallet or even just a rolling pin and pound away.
Next, you’ll roast the chicken in a high heat oven for 15 minutes or so, until it reaches 165 internally. You can try the old cut the chicken to see if it’s done thing, but that’s an unreliable method. The cooking time will depend on the size of you chicken breasts, but you should start checking at about 15 minutes. Serve this with your favorite veggies for a healthy meal.

Ingredients
- 1 tbsp Ava Jane's Kitchen Roadside Chicken spice blend
- 1 tsp Ava Jane's Kitchen Nana's Italian Seasoning
- 1 tsp packed brown sugar
- 2 chicken breasts
- 1 tbsp Ava Jane's Kitchen Avocado Oil
Instructions
- Preheat oven to 425 degrees F.
- Combine the Roadside Chicken, Nana’s Italian, and brown sugar in a small bowl.
- Put the chicken breasts between two pieces of plastic wrap and pound evenly until they are about 1 inch all around.
- Line a sheet pan with parchment or aluminum foil. Add the chicken. Brush with the avocado oil and sprinkle evenly with the seasoning mix.
- Bake for 15 minutes and check with a meat thermometer. Temperature should be 165 degrees. If it’s not, continue cooking, but check every minute or two until it reaches the right temperature.
- Remove from oven and let rest for 5 minutes before serving.
Great but using aluminum foil is not a good idea. The chemicals from the aluminum leach into you baked food and has been linked to causing cancer.
You can use parchment or a silicone baking mat if you have one instead of foil, and it should turn out fine.
Chicken recipe is very good all except advising you can use the aluminum foil as foil is something that we have learned NOT to use as it leaches into the food and can cause many adverse things for the body.

The chicken is still raw sitting on the counter. The oil and spices burned on my lined pan. Maybe I should modify the recipe and put the chicken on the lined pan, then oil and add spices.
Your recipes sound delish but I don’t buy seasonings without reading labels of the content. I need to know whatI am putting on my food.
