This one, made with Ava Jane’s Kitchen pumpkin pie spice and ground coffee is a warm, sweet and spicy blend that has the rich flavor of fall — it’s like a pumpkin latte but in the form of a meal. That might sound weird, but try it; I think you’ll be surprised.
You can use this rub on other things — pork comes to mind — or any kind of steak you want. The steak is cooked in Ava Jane’s Kitchen Avocado Oil, and can be served with whatever your favorite steak accompaniments. Sautéed spinach, roasted asparagus, or mashed potatoes work nicely. If you are still grilling out where you are, grill the steaks. Or cook them in a hot skillet. It’s the perfect fall meal that will not disappoint.
Prep time: 30 minutes
2 tablespoons Ava Jane’s Kitchen Pumpkin Pie Spice
1 tablespoon finely ground coffee or instant espresso
2 teaspoons brown sugar
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt or finely crushed Colima Sea Salt
2 beef tenderloin steaks
Ava Jane’s Kitchen Avocado Oil, for cooking
Combine the pumpkin pie spice, coffee grounds, brown sugar, chili powder, smoked paprika, and salt in a small bowl. Mix until combined.
Rub the mixture over your steaks, pressing it into the flesh. Let rest for 15 minutes or so.
Heat a cast irons skillet over medium high heat. Add enough oil to coat the bottom.
Sear the steaks on both sides until done to your liking. Rest for a few minutes and serve with your favorite vegetable.
