Summer is salad season, which is the only reason I’m really a fan of this time of year. While many of my salads are full of leafy greens and juicy summer tomatoes, sometimes that’s not necessary.

Like here. This salad is full of spring veggies, and is crunchy, flavorful, and refreshing. It’s the perfect side dish to a backyard barbecue if you want to bring something healthy, but it’s a great way to use up a bunch of radishes that you got from the farmer’s market with no plans for them (not saying that’s ever happened to me!)

The dressing is a simple blend of Ava Jane’s Kitchen Avocado Oil, mustard and lemon juice, with some Citrus Salt & Pepper seasoning to round it out. I like this blend when I don’t want something overly spicy, but still need a little more than just salt. It’s great for things like this because it lets the flavor of the veggies shine through. A sprinkling of Colima Sea Salt at the end seals the deal.

Serves 4
Prep time: 20 minutes

 

Ingredients:

1/2 cup Ava Jane’s Kitchen Avocado Oil

1 tablespoon Ava Jane’s Kitchen Citrus Salt & Pepper

2 teaspoons Dijon mustard

Juice of 1 lemon

1 small bunch of radishes, thinly sliced

2 small apples, cored and sliced

2 cucumbers, sliced

2 tablespoons fresh chopped dill or parsley

Colima Sea salt

 

Directions:

Whisk the oil, seasoning, mustard, and lemon juice in a bowl until well combined.

Add the radishes, apples, cucumbers, and dill and toss to coat.

Chill until ready to serve, and sprinkle with Colima Sea Salt just before serving.
