Put everything but the chicken in a blender and blend untilsmooth. Taste and adjust seasoning to your preference.
Put the chicken in a plastic bag or casserole dish and pourthe marinade overtop, making sure all of the chicken is coated. Refrigerate for2-6 hours.
When ready to cook, thread the chicken onto soaked wooden ormetal skewers. Preheat a gas or charcoal grill to medium high heat.
Grill the chicken until charred and cooked through.
Use this again: This chicken would be amazing on a taco salad or chopped and added to tacos. For one or two servings: Recipe can easily be doubled. For half, taste the marinade and adjust seasonings. Store leftovers: Store leftover chicken in a covered container in the fridge for up to 3 days.
