  • Preheat oven to 450 degrees F.
  • Toss the vegetables with the seasoning, avocado oil, and mustard. Spread on a baking sheet in a single layer. 
  • Roast for 20-25 minutes, stirring once, until vegetables are tender and caramelized. 
  • Remove, add the pecans and cranberries, and serve warm. 


Use this again: Add some shredded chicken for a hearty leftover lunch. Or add to a green salad with some goat cheese. 
For one or two servings: Recipe can easily be doubled or halved.
