Hot Cajun Chicken and Veggies

  • Preheat oven to 350 degrees F.
  • Season the chicken with the the seasonings. 
  • Heat a large, deep, ovenproof skillet over medium high heat and add the oil. 
  • Add the chicken pieces to the pan and sear until browned on both sides. Remove and set aside. 
  • Add the veggies to the pan and cook until softened. 
  • Add the chicken back to the pan and transfer to the oven.
  • Bake until chicken reaches an internal temperature of 165 degrees. 
  • Remove, and serve the chicken topped with the vegetables. 

Notes

Use this again: You could chop the leftover chicken and use for a Cajun chicken salad. Or put in a tortilla with some cabbage and sour cream for a Cajun style taco. 
For one or two servings: Recipe can easily be halved or doubled. Just keep an eye on the temperature, as it may fluctuate. 
Store leftovers: Leftovers can be stored in the fridge for up to 3 days.
